Take your usual green smoothie to the next level by adding soaked cashews. It’s an extra step but worth the effort — the blended cashews create a creamy texture (without any dairy) while adding extra... protein and healthy fat. With quick prep the night before, this smoothie will come together in no time.
Place the cashews in a bowl or small container and add enough water to cover them by a half-inch. Transfer to the fridge to soak overnight (see Chef Tips).
Drain the water from the cashews. Add all ingredients, including 1½ cups of milk, to a high-speed blender and blend on high until smooth. Add another ½ cup of milk to thin the smoothie if needed.
Serve immediately.
Chef Tips
Swap the pineapple chunks with frozen fruit of your choice. Using frozen fruit instead of ice is a great way to get texture without diluting the flavor of smoothies.
If you’re short on time, soak the cashews at room temperature for 2-3 hours to soften them.
