Preheat the oven to 375 degrees. Line 2 baking sheets with parchment paper.
Beat the sugar and butter until light and creamy. Stir in the egg and vanilla.
In a separate bowl, sift together the flour, baking soda and salt. Mix into the wet ingredients until just well blended. Stir in the chopped nuts and chocolate chips.
Use a tablespoon to drop 20 heaping spoonfuls onto the prepared baking sheet. Flatten slightly and sprinkle with flaky salt if using. Bake for 8-10 minutes. Cool slightly then transfer to a wire rack.

If you can’t find whole wheat pastry flour, substituting with a mix of 1/2 all-purpose flour and 1/2 whole wheat flour works well.
