A freshly cooked rotisserie chicken can be a super quick fix when you don’t have time to cook dinner or are feeling fatigue from treatment and need an easy meal. But unless you can manage to eat the entire thing at a sitting, a whole chicken will give you lots of leftovers. I’ve learned through our classes that despite the fact that cooked chicken will keep in the... fridge for up to 3 days, many people are leery about eating it even the next day, so all too often the leftovers sit in the fridge until they’re thrown out. Sound familiar? In my eyes those leftovers mean yummy lunch sandwiches, flavorful curries, quick stir-fries, classic chicken potpies, and, when I’ve done all that, there are still the bones left to make delicious stock for the freezer for future soups. Call me thrifty, I’ll take it. Here are some easy recipes to help you to enjoy every last morsel of the bird while getting your money’s worth. Enjoy!
