Ingredients

  • 1 (16 ounce) bag frozen mango chunks (see Chef Tips)
  • 2 teaspoons sugar or to taste
  • Juice of 1 lime
  • 1 tablespoon water
  • 1 recipe Vegan Coconut Crumble Topping

For the Vegan Coconut Crumble topping:

  • ¾ cup whole wheat pastry flour, plus 1 tablespoon for dusting
  • ¼ cup unsweetened desiccated shredded coconut
  • ¼ cup rolled oats
  • ⅓ cup sugar
  • ½  teaspoon ground ginger (optional)
  • ½  teaspoon salt or to taste
  • ⅓ cup coconut oil, melted

Directions

  1. For the crumble topping: In a large bowl, whisk all the dry ingredients together with a fork until well blended. Make a well in the center and pour in the coconut oil. Start to mix together with the fork until you have a lumpy mixture. Dust with the tablespoon of flour and gently rub the ingredients together with your fingertips until the crumble looks like chunky breadcrumbs. Don't over mix.
  2. Spread onto a small baking sheet lined with parchment paper, cover with cling wrap and chill for at least an hour, or until you are ready to use it. Chilling hardens the coconut oil and will make the crumble crispier.
  3. For the filling and to assemble: Preheat oven to 375 degrees.
  4. Rinse the frozen mango under cold running water, place in a greased 1 quart, 2-inch deep baking dish, and break up the chunks. Sprinkle with the sugar, then with the lime juice and toss together.
  5. Cover with the crumble mixture, breaking up large chunks with your fingers. Bake for 30-35 minutes. The crumble will be lightly browned and the mango bubbling underneath. Let it sit for 10 minutes. Serve warm or at room temperature.

Chef Tips

The crumble topping can be used with any combination of fruit. Try mixing Gala apples with frozen raspberries and a little lemon instead of the mango.
