This Curried Green Beans dish is a great way to jazz up green beans. Use a wok for the cooking if you have one. It’s simple and tasty and beats a casserole hands down.... The turmeric that gives curry powder its yellow color is known to be a powerful cancer fighting antioxidant, so not only are these beans delicious, they happen to be good for you too!
In a sauté pan, heat olive oil on medium heat. Add the onions and sauté until the onions are soft and translucent, about 5 minutes.
Add the curry powder, paprika and oregano. Cook stirring until the onions are coated in the spices, about 30 seconds. Add the green beans and season with salt. Cook the green beans for about 5 minutes, stirring, or until they are just soft. Add 2 tablespoons water if needed.
Chef Tips
For a little extra flavor, add a couple of tablespoonfuls of coconut water instead of tap water in step 2.
